Veggie Omelette Wrap

Prep Time: 10 minutes | Serves: 1

Ingredients:

2 eggs
1/4 cup diced bell peppers
1/4 cup diced spinach or kale
1 tbsp shredded cheese (optional)
1 whole wheat tortilla (or gluten-free wrap)
Salt and pepper to taste
Instructions:

Whisk the eggs in a bowl with salt and pepper.
Cook the eggs in a non-stick pan, adding in the veggies as they cook.
Once cooked, place the omelet on the tortilla, add cheese if desired, and roll it up for a quick wrap.
