Ingredients:
- 1 slice of whole grain bread (or gluten-free alternative)
- 1/2 ripe avocado
- 1 egg
- Salt and pepper to taste
- Red pepper flakes (optional)
- Olive oil drizzle
Instructions:
- Toast the bread.
- While toasting, mash the avocado in a bowl with a pinch of salt and pepper.
- Poach the egg in simmering water for about 3-4 minutes.
- Spread the avocado on toast, place the poached egg on top, and finish with a drizzle of olive oil and a sprinkle of red pepper flakes.
